What does "organic flour" actually mean, and why should we choose it?
With the growing popularity of healthy eating, the variety of products on the market can be confusing. We at Ecosem believe that an informed choice is the best choice, so we share with you what stands behind the "Organic" label of our flours.
What makes a flour organic?
To call our flour organic, we follow a strict process controlled by certifying bodies:
-
Pure origin: We use only organic certified grains.
-
Clean soil: Grains are grown in soil that has not been treated with chemicals for at least several years.
-
No chemicals: No artificial fertilizers, pesticides, antibiotics, preservatives or improvers are used in the cultivation and production process.
-
Organic mill: Milling is done in a certified organic mill.
White or whole grain?
The main difference lies in which parts of the grain reach your package:
-
Whole grain flour: Contains all parts of the grain, including the bran and germ. It is darker in color and significantly richer in fiber.
-
White flour: In this case, the bran is removed by sifting through a system of extremely fine sieves. Our white flour has a characteristic creamy color, as it is completely natural and has not undergone chemical bleaching.
Professional tips for working with organic flours
Since our flours have no added improvers, they require a little more special attention in the kitchen:
-
Gradual hydration: Add water little by little. Pure flours are more difficult to process at high humidity.
-
Resting time: Let the dough rest to absorb the liquid well.
-
Patience when rising: If you use yeast, let the flour rest for a few hours. When working with sourdough, a minimum of 6 hours of rest is required.
