
Rye cake with apples, cinnamon, and stevia
This cake is the perfect solution for lovers of balanced desserts. The use of organic wholemeal rye flour Ekosem, stone-ground, gives the baked good its characteristic density and deep aroma. In combination with fresh apples, Ceylon cinnamon, and stevia, this dessert is not only delicious but also a lighter alternative to traditional sweets.
Ingredients:

120 grams of organic wholemeal rye flour Ekosem

100 grams red apples (1 medium apple)

60 grams melted butter

50 grams egg (1 piece)

30 grams fresh milk

20 grams powdered stevia

2 teaspoons Ceylon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon baking powder
Preparation:

Mixing the wet ingredients: In a deep bowl, combine the melted butter, egg, and fresh milk. Whisk well with a wire whisk until homogeneous.

Adding the dry ingredients: Start adding the dry ingredients (rye flour, stevia, cinnamon, baking soda, and baking powder) one by one to the wet mixture, stirring continuously. You should get a sticky and thick homogeneous mixture.

Preparation for baking: Line a small baking pan (approx. 20x10 cm) with parchment paper and pour the mixture into it.

Decoration: Cut the apple into thin half-moons and arrange them beautifully on top of the dough, pressing them down lightly.

Baking: Bake on the middle rack in a preheated oven at 180°C for about 30–35 minutes.

Cooling: Remove the finished cake and transfer it to a wire rack to cool completely before serving.
