Rye cake with apples, cinnamon, and stevia

This cake is the perfect solution for lovers of balanced desserts. The use of organic wholemeal rye flour Ekosem, stone-ground, gives the baked good its characteristic density and deep aroma. In combination with fresh apples, Ceylon cinnamon, and stevia, this dessert is not only delicious but also a lighter alternative to traditional sweets.

Ingredients:

  • 120 grams of organic wholemeal rye flour Ekosem

  • 100 grams red apples (1 medium apple)

  • 60 grams melted butter

  • 50 grams egg (1 piece)

  • 30 grams fresh milk

  • 20 grams powdered stevia

  • 2 teaspoons Ceylon cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder


Preparation:

  1. Mixing the wet ingredients: In a deep bowl, combine the melted butter, egg, and fresh milk. Whisk well with a wire whisk until homogeneous.

  2. Adding the dry ingredients: Start adding the dry ingredients (rye flour, stevia, cinnamon, baking soda, and baking powder) one by one to the wet mixture, stirring continuously. You should get a sticky and thick homogeneous mixture.

  3. Preparation for baking: Line a small baking pan (approx. 20x10 cm) with parchment paper and pour the mixture into it.

  4. Decoration: Cut the apple into thin half-moons and arrange them beautifully on top of the dough, pressing them down lightly.

  5. Baking: Bake on the middle rack in a preheated oven at 180°C for about 30–35 minutes.

  6. Cooling: Remove the finished cake and transfer it to a wire rack to cool completely before serving.
