
Healthy Sesame Cookies with Rice Flour and Tahini
These small but satisfying cookies are the perfect addition to afternoon tea or coffee. The use of Ecosam rice flour, stone-ground, gives the baked goods a delicate and fine texture. Thanks to sunflower tahini and sesame, they are rich in healthy fats, and dates provide a delicate natural sweetness without refined sugar.
Ingredients (for 14 pieces):

100 grams of Ecosam rice flour

50 grams of sunflower tahini

40 grams of egg yolks (2 pieces)

40 grams of butter

47 grams of dates (about 3 pieces)

30 grams of raw sesame

5 grams of baking powder
Method of preparation:

Blending: In a blender, put the dates, egg yolks, butter, and sunflower tahini. Blend until a completely homogeneous mixture is obtained.

Kneading: Transfer the mixture to a bowl and add the dry ingredients – rice flour, raw sesame, and baking powder. Knead by hand into a soft and slightly crumbly dough.

Shaping: Divide the dough into 14 equal parts (about 20g each). Form small balls, then flatten them slightly to get a cookie shape (the size of a French macaron).

Baking: Arrange them on a baking sheet lined with parchment paper or a silicone mat. Bake on the middle rack in a preheated oven at 175°C for about 10–12 minutes.

Cooling: Remove the cookies and let them cool completely before storing.
