  • How to make a chia/flax "egg": Mix 1 tablespoon of seeds with 3 tablespoons of water and wait 5-10 minutes for it to thicken.

  • Tip: Add an additional 1/4 tsp baking powder to compensate for the lack of leavening.


6. Sparkling water

Sparkling water adds carbon dioxide, which aids leavening and keeps baked goods airy without altering their taste.

  • How to substitute: 60 g sparkling water = 1 egg.

  • Applications: Bread, cupcakes, cake sponges, and breadings (for a crispy texture).
