
Light and moist cake with rice flour and dried cherries
This cake is an excellent choice for gluten-free dessert lovers, combining the delicate texture of Ecosem rice flour with the intense sweetness of dried cherries. The stone-ground flour gives the pastry a fine structure, while the combination of butter and yogurt guarantees a juicy and rich taste in every bite.
Ingredients:

100 grams of Ecosem whole grain rice flour

100 grams of dried red cherries

3 eggs (about 150 grams)

200 grams of brown sugar

100 grams of yogurt

100 grams of butter

1/2 packet of baking powder
Preparation method:

Whisking the base: Whisk the eggs with the sugar very well for about 7-8 minutes until the mixture becomes fluffy.

Mixing the ingredients: To the egg mixture, add the butter, yogurt, and baking powder in succession. Mix well and finally add the rice flour, stirring until a homogeneous mixture is obtained.

Preparation for baking: Place baking paper in a small baking dish with a diameter of 20 cm. Pour the mixture and sprinkle with dried red cherries on top.

Baking: Bake on the middle rack in a preheated oven at 180°C for about 50–60 minutes.

Serving: Remove the cake and let it cool completely. Optionally, sprinkle with powdered sugar or chopped walnuts before serving.
