
Spelt Clover Butter Buns
Clover-shaped butter bread rolls are the perfect homemade breakfast or side dish – fluffy on the inside, golden on the outside, and with a pleasant aroma of butter and cheese. Using Ecosem spelt flour, ground in a stone mill, gives an authentic taste and delicate texture, and the clover shape makes the rolls not only delicious but also impressive for serving.
Ingredients:
- 180 g Ecosem spelt flour
- 150 g Ecosem white flour
- 5 g dry yeast (or 12 g fresh)
- 1 tsp sugar
- 1 tsp salt
- 35 g soft butter
- 110 g yogurt
- 130 ml warm water
- 80–100 g crumbled cheese
- 15 g melted butter for brushing
- Optional: sesame seeds, poppy seeds, savory mix, parsley
This quantity makes about 8 rolls.
Instructions:
- Prepare dry ingredients: Mix spelt flour, white flour, yeast, sugar, and salt in a large bowl.
- Add butter and yogurt: Add the soft butter and yogurt. Stir until the mixture is slightly crumbly.
- Form the dough: Gradually add warm water until you get a soft, slightly sticky dough. Knead gently for 4–5 minutes.
- First rise: Cover the bowl and let the dough rise for about 60 minutes, until it doubles in volume.
- Add cheese: Pour the risen dough onto the counter, sprinkle the crumbled cheese on top, and fold the dough 2–3 times. Knead for only 20–30 seconds, just enough for the cheese to be slightly distributed.
- Shape the rolls: Divide the dough into 24 equal parts and form small balls.
- Second rise: Arrange them in a muffin tin, 3 per cup, and let them rise for about 20 minutes.
- Bake: Brush with melted butter and desired spices and bake at 200°C for 17–20 minutes until golden brown.
- Final touch: Brush once more with butter immediately after removing from the oven for maximum softness and aroma.
