
Healthy Banana Cake with Cottage Cheese and Spelt Bran
This banana cake is the perfect solution for a quick, nutritious, and delicious breakfast. The use of Ekosem spelt bran, ground in a stone mill, enriches the pastry with valuable fiber, and the combination of cottage cheese and eggs provides the necessary protein. The result is a juicy dessert with natural sweetness and a delicate cinnamon aroma.
Ingredients:

30 grams Ekosem spelt bran

1 banana (about 90 grams)

130 grams cottage cheese

1 egg (about 70 grams)

30 grams black raisins

30 grams water

1/2 tsp cinnamon

1/2 tsp baking powder
Instructions:

Base: Mash the banana with a fork in a deep bowl. Add the cottage cheese, egg, and water, then stir well.

Mixing: Add the dry ingredients – spelt bran, cinnamon, and baking powder. Stir until completely smooth.

Preparation for baking: Pour the mixture into a suitable baking pan, previously lined with baking paper. Arrange the black raisins on top, pressing them lightly into the batter.

Baking: Place the pan on the middle rack in a preheated 180°C oven. Bake for about 20–25 minutes until done.

Serving: After removing the cake, let it cool. Run a thin knife along the edges of the pan to easily release it, cut into slices, and serve.
