
Fresh Lemon Cookies with Coconut, Chia, and Rice Flour
These aromatic cookies are the perfect combination of exotic coconut, the superfood chia, and refreshing lemon juice. The base of Ecosam rice flour, stone-ground, makes their texture light and pleasant, while coconut sugar adds a subtle caramel note. They are an excellent choice for a healthy dessert or an energetic snack that is prepared extremely quickly.
Ingredients (for 10 pieces):

10 tablespoons Ecosam rice flour

6 tablespoons shredded coconut

6 tablespoons freshly squeezed lemon juice

2 tablespoons chia seeds

2 tablespoons coconut sugar

2 eggs
Preparation method:

Dough preparation: Place all ingredients in a deep bowl and knead well until a soft and easy-to-shape dough is formed.

Shaping: Break off pieces of the dough and form walnut-sized balls. Gently flatten them between your palms to create a classic cookie shape.

Arrangement: Place the cookies on a baking tray, previously lined with baking paper.

Baking: Bake on a middle rack in a preheated oven at 180°C for about 15–20 minutes, until they acquire a light golden tan.

Cooling and storage: Remove the finished cookies and place them on a wire rack until completely cool. To preserve their freshness and aroma, store them in an airtight container.
