
Apple, Carob, and Rice Flour Wet Brownies (Gluten-Free)
This brownie is true proof that healthy desserts can be incredibly moist and full of flavor. The use of Ecosam whole-grain rice flour, stone-ground, gives the cake a lightness, while carob flour provides a natural chocolate flavor without the need for cocoa. Fresh apples complete the composition, keeping the texture moist and fresh.
Ingredients:

100 grams Ecosam whole-grain rice flour

300 grams green apple (about 3 small apples)

200 grams yogurt

3 tablespoons carob flour

2 tablespoons butter
-
2 teaspoons rice syrup (or honey/stevia)

1 teaspoon baking soda
Instructions:

Prepare the apples: Divide the apples – two of them (about 200 g) will be pureed, and the third (about 100 g) cut into small cubes for the finish.

Mix dry and wet ingredients: Place the rice and carob flour in a blender. Add the yogurt, in which the baking soda has been dissolved beforehand.

Homogenize: Since the dough is initially thicker, add the two apples (roughly chopped or grated), butter, and rice syrup. Blend until a smooth and homogeneous mixture is obtained.

Shape: Grease a baking dish (preferably round, 20 cm in diameter) and pour in the mixture. Spread the cubes from the third apple on top and press them lightly to sink into the dough.

Bake: Bake in a preheated oven at 150°C for exactly 60 minutes.

Important: Do not exceed the baking time – the brownie is designed to remain "wet" and moist even after it has completely cooled.
