
Spelt Cheesecake Biscuits with Strawberry Jam
These innovative cookies combine the crispy base of oats and spelt with the delicate taste of cheesecake. The use of whole grain spelt flour, stone-ground, adds density and richness of nutrients, making them the ideal healthy dessert.
Ingredients:
For the cookie base:

100 grams whole grain spelt flour

125 grams rolled oats

75 grams melted butter

2 tablespoons coconut sugar
For the filling:

About 3 tablespoons sugar-free strawberry jam

About 2 tablespoons cream cheese
Instructions:

Prepare the mixture: In a deep bowl, combine the rolled oats, spelt flour, melted butter, and coconut sugar. Mix well until large buttery crumbs form.

Shape: Take a handful of the mixture and form a firm ball, then flatten it onto a baking sheet lined with parchment paper. Using your thumb, make several indentations on the surface of each cookie. This recipe yields 6 cookies with a diameter of about 8 cm.

Add cheesecake accent: Place a small amount of strawberry jam and cream cheese into each indentation.

Bake: Bake on the middle rack in a preheated oven at 180°C for exactly 12 minutes.

Cool: Carefully remove them and let them cool completely on a tray before storing them in a container or jar.
