
Kneaded spelt flatbread with sheep's cheese
This quick bread is the perfect solution for a fast, satisfying, and healthy breakfast or an addition to lunch. The use of Ecosem whole grain spelt flour, stone-ground, gives the pastry a rich taste and a distinctive texture that pairs excellently with the aroma of sheep cheese and butter.
Ingredients:

200 grams Ecosem whole grain spelt flour

200 grams high-fat yogurt

200 grams sheep cheese

50 grams butter (melted)

2 eggs

1 teaspoon baking soda

Pinch of salt
Method of preparation:

Prepare the base: In a bowl, mix the yogurt with the baking soda and stir well until the mixture starts to foam.

Mixing: Add the melted butter and salt, then stir again.

Kneading: Finally, add the whole grain spelt flour and the crumbled sheep cheese. Stir vigorously until a thick and homogeneous mixture is formed.

Baking: Grease a 26 cm diameter baking dish with a little butter and pour the mixture into it. Bake on a middle rack in a preheated oven at 180°C with fan assist for about 18–20 minutes.

Finish: After removing the quick bread, if desired, brush it with a little butter on top and cover it with a kitchen towel to soften.
