
Whole grain rye cake with dates and dried cherries
This cake is true proof that healthy baking can be exceptionally delicious and flavorful. The use of natural whole grain rye flour EKOSEM, milled on a stone mill, gives the dessert a dense texture and a rich fiber content. The natural sweetness comes from dates, and dried cherries add a pleasant tart note, turning every bite into a balanced pleasure.
Ingredients:

200 grams natural whole grain rye flour EKOSEM

120 grams dates (about 8 pieces)

200 ml fresh milk

240 grams eggs (4 pieces)

50 grams butter

50 grams dried cherries

5 grams baking powder
Method of preparation:

Blending the base: In a blender, put the eggs, pitted dates, butter, and fresh milk. Blend until you get a completely homogeneous mixture.

Adding the flour: Add the rye flour and baking powder to the liquid mixture. Blend again briefly until well combined.

Preparation for baking: Pour the resulting mixture into a silicone cake mold.

Adding the cherries: Sprinkle the surface with dried cherries, gently press them into the dough with a spoon, and add a few more on top for decoration.

Baking: Bake on a middle rack in a preheated oven at 175°C for about 35–40 minutes.

Finish: Remove the finished cake from the oven and turn it out onto a serving plate or large dish.
Small tip: Since we are using whole grain flour, the cake will not rise much, but it will be extremely satisfying. Optionally, you can generously drizzle it with tahini when serving for an even richer taste.
