
Aromatic spelt cookies with dried roses and chocolate chips
These cookies are a true sensory journey, combining the delicate aroma of roses with the rich taste of natural chocolate. The use of EKOSEM einkorn flour, stone-ground, gives the pastry a fine texture and valuable nutritional qualities. The natural sweetness of dates and delicate rose water transform these cookies into an exquisite dessert, suitable for any special moment.
Ingredients:

300 grams EKOSEM einkorn flour

200 grams dates (pitted)

80 grams butter (melted)

50 grams dark chocolate

30 ml rose water

2 eggs (beaten)

A handful of dried rose petals

1 teaspoon baking powder
Instructions:

Fruit paste preparation: Blend the pitted dates together with the rose water until a smooth paste is formed.

Dough kneading: In a bowl, mix the einkorn flour with the date paste, melted butter, baking powder, and beaten eggs. Knead a soft dough.

Chilling: Place the dough in a bowl, cover with cling film, and leave it in the refrigerator for about an hour to firm up.

Additions: Meanwhile, chop the dried rose petals and dark chocolate into small pieces. Add them to the chilled dough and knead gently to distribute evenly.

Shaping: Divide the dough into 12 equal balls. Flatten each with your palms and arrange them in a large baking tray (40x40 cm), lined with baking paper, about a centimeter apart.

Baking: Bake on the middle rack in a preheated oven at 180°C for about 15–16 minutes.

Finish: Allow the cookies to cool completely on a wire rack before consumption. Store in a tightly sealed container to preserve their aroma.
