
Fluffy buns with coconut sugar and strawberry jam
These homemade croissants are the perfect combination of tradition and modern taste. The use of Eкосем white wheat flour, stone-ground, guarantees a unique texture, and coconut sugar gives a light caramel aroma. From the specified quantities, you will get 16 fragrant croissants.
Ingredients:
For the dough:

600 grams Eкосем white wheat flour

200 grams coconut sugar

200 ml fresh milk

4 eggs
-
20 grams fresh yeast

100 grams butter
For the filling and finishing:

150 grams strawberry jam
-
2 egg yolks and 2 tbsp olive oil (for brushing)

White or coconut sugar (for sprinkling)
Method of preparation:

Activating the yeast: Sift the flour and make a well. Warm the milk and dissolve the yeast in it until fully activated.

Kneading: Pour the milk mixture into the well. Add the eggs, melted butter, and coconut sugar. Knead a soft dough, cover it with a cloth, and let it rise at room temperature until it doubles in volume.

Shaping: Divide the dough into three equal balls. Roll each into a circle about 30 cm in diameter and cut into triangles.

Filling: Place one teaspoon of strawberry jam on the wide part of each triangle and carefully roll into a croissant.

Baking: Arrange the croissants on a baking tray with baking paper. Brush them with the beaten egg yolks and olive oil, then sprinkle with sugar of your choice. Bake at 180°C for about 35–40 minutes until done.

Storage: Let them cool on a wire rack. To keep them soft, store them in a tightly closed container.
