
Authentic pulled banitsa with a mix of three types of flour
Nothing compares to the aroma of freshly baked phyllo pastry banitsa. This recipe is a true culinary journey that combines three of our best products: type 1150 wheat flour, white wheat flour, and white spelt flour. Milled on a stone mill, these flours give the phyllo elasticity when stretched and an incredible crispness after baking.
Ingredients:
For the dough:

150 grams Ekozam natural white wheat flour

150 grams Ekozam white spelt flour

100 grams Ekozam natural type 1150 wheat flour

200 milliliters warm water

1 tablespoon olive oil
-
1 tablespoon white balsamic vinegar (or regular)
For the filling and baking:

2 eggs
-
150–200 grams sheep's milk cheese

100–150 grams yogurt
-
Butter and oil for greasing
Instructions:

Kneading the dough: Knead an elastic dough from the water, olive oil, vinegar, and the three types of flour. Knead continuously until bubbles start to form when stretching. Divide the dough into three equal parts.

Resting: Lightly roll each part into a small circle. Place them on a clean cloth, grease them generously with oil (to prevent a crust from forming), and cover them with another cloth. Let the dough rest and relax well – this is the secret to easy stretching.

Preparing the filling: Beat the eggs with the yogurt and add the crumbled sheep's milk cheese. Grease a baking pan (28 cm diameter) with butter.

Stretching the phyllo sheets: Take one rested dough ball and carefully stretch it with your hands on the cloth until a transparent, thin sheet forms. Remove the coarser edges of the dough. Grease the sheet with butter, place some of the filling at one end, and roll it into a scroll with the help of the cloth.

Shaping and baking: Arrange the scrolls in the pan in a snail shape. Generously grease the banitsa with butter and add fat between the scrolls (it should cover about half of their height).

Baking: Place the banitsa on the middle rack in a cold oven and set it to 200°C. Bake until it has a rich golden-brown color.
