
Healthy Carrot-Apple Cake with Rice Flour
This cake is a true celebration of natural flavors and healthy eating. The combination of fresh carrots, juicy green apple, and aromatic EKOSEM rice flour, stone-ground, creates a light and fluffy base. With no added refined sugar and rich in protein thanks to the cottage cheese, this dessert idyll is suitable for special occasions as well as a wholesome afternoon snack.
Ingredients:
For the layers:

50 grams of EKOSEM rice flour

1 carrot (approx. 50 grams)

1 green apple (approx. 100 grams)

2 eggs

2 grams of powdered stevia

1 teaspoon of baking powder

Spices: 1/2 tsp Ceylon cinnamon, 1/4 tsp nutmeg, 1/4 tsp turmeric
For the cream and decoration:

250 grams of cottage cheese

50 grams of agave syrup
-
60 grams of fresh walnuts

2–3 tablespoons of water
Instructions:

Prepare the fruits and vegetables: Peel the carrot and apple and grate them on the finest grater.

Prepare the batter: Separate the egg whites from the yolks. Beat the egg whites with stevia until foamy. Carefully add the grated fruits and vegetables, followed by the egg yolks (one by one), stirring until homogeneous. Finally, add the rice flour and all the spices.

Bake the layers: On parchment paper, form circles with a diameter of 17 cm (the mixture yields 4 to 6 layers). Bake on a middle rack in a preheated oven at 180°C for about 5–6 minutes. Let them cool completely.

Prepare the cream: Blend the cottage cheese with the agave syrup and a little water for about two minutes, until you get a thick and delicate mixture.

Assemble: Start with a little cream on the plate, followed by a layer, a layer of cream, and a sprinkle of walnuts. Alternate until all ingredients are used up and finish with generous walnut decoration.

Chill: Leave the cake in the refrigerator overnight for the flavors to meld and the layers to soften perfectly.
