
Dough flowers with goat cheese, spring onion and cherry tomatoes

Ingredients:
For the dough:

250 grams white flour

100 milliliters warm fresh cow's milk

30 milliliters warm water

15 grams fresh bread yeast

1/2 teaspoon brown sugar

20 grams melted cow's butter

1/4 teaspoon salt

1 egg (plus 1 yolk for brushing)
For the filling:

100 grams goat cheese
-
2 stalks fresh green onions
-
Cherry tomatoes
Preparation:

Kneading the dough: Sift the flour into a deep bowl and make a well. Mix the water with the milk, yeast, and sugar, stir until dissolved, and pour into the flour along with the egg. Knead a soft dough, gradually adding the salt and butter.

Proofing: Place the dough in a bowl, cover with cling film, and leave at room temperature for 40-45 minutes.

Shaping the flowers: Divide the proofed dough into four equal balls and roll each into a circle. Cut each circle into four sections, without reaching the center.

Filling and assembly: Mix the crumbled goat cheese with the chopped fresh green onions. Place some of the filling in each section and bring their ends together two by two to form petals. In the empty "heart" of each flower, place one cherry tomato.

Baking: Transfer the flowers to a baking tray lined with baking paper and brush them generously with the beaten egg yolk. Bake in a preheated oven at 180°C for about 40 minutes.

Serving: After baking, cool on a wire rack under a cotton cloth.
