
Quick Gluten-Free Chickpea Crust Pizza
This recipe is the ideal solution for a healthy dinner when you have little time but don't want to compromise on taste. The main star here is the two-ingredient crust, made with EKOSEM natural chickpea flour, stone-ground. Chickpea flour gives the base a slightly nutty flavor and a pleasant crispiness, while being naturally rich in protein and fiber.
Ingredients:
For the dough:

100 grams of natural chickpea flour

200 milliliters of water
For the filling:

50 grams of cow's cheese

50 grams of cooking cream (22% fat)

4 cherry tomatoes

1 large yellow onion
Instructions:

Prepare the crust: Mix the chickpea flour with water and stir well until a completely homogeneous mixture is obtained.

First baking: Line a 26 cm diameter baking tray with baking paper. Pour the mixture and bake on the middle rack in a preheated oven at 220°C for about 7–8 minutes, until the crust turns a light brownish shade.

Prepare the toppings: Meanwhile, cut the cherry tomatoes in half and the peeled onion into thin slices.

Assemble: Remove the crust from the oven. Spread the cream evenly, arrange the cherry tomatoes and onion on top, and finish with the grated cheese.

Final baking: Return the pizza to the oven for another 5 minutes, until the cheese melts and turns golden brown.

Serve: Remove the tray, carefully remove the baking paper, and cut into slices.
