How to cook pasta like a pro
Easy and quick to prepare, pasta is one of the most popular staple foods that we should always have on hand in the pantry. No matter what your favorite types are, following a few basic principles will help you serve them with perfect texture and taste every time.
The Golden Rules for Perfect Pasta
-
Always salt the water: This is key to the taste of both the pasta itself and the sauce you serve it with.
-
Measure portions: To avoid food waste, allow 75 grams per person (or 300g for a family of four).
-
Ensure space: Use a large pot with plenty of water so the pasta has enough room to cook.
-
No oil in the water: Contrary to some beliefs, adding oil or olive oil is not necessary and even prevents the sauce from "sticking" to the pasta. Good stirring is completely sufficient to prevent sticking.
-
Do not rinse after boiling: Rinsing washes away the starch that helps the pasta bind perfectly with the sauce.
-
Save some of the water: Before draining the pasta, set aside one or two cups of the water it boiled in. It's an invaluable addition to the sauce if thinning is needed.
Cooking Time by Type
Always check the package instructions, but use the following standard times as a guide:
-
Fideo (thin noodles): 3–5 minutes.
-
Penne: 5–7 minutes.
-
Spaghetti: 7–9 minutes.
-
Fusilli: 8–10 minutes.
-
Tip: Test for doneness 1–2 minutes before the recommended time.
